Woked noodles with fillet of pork

4 portions
Ingredients:
200 g of egg noodles
400 g of fillet of pork
1 bunch of scallions (or leek)
4 tbs of cooking oil
1 garlic clove (optional)
Marinade:
1 tbs of freshly grated ginger or 1 tsp of ground ginger
1 pinch of sugar
1 tbs of oyster sauce (can be found at any Asian shop)
1 pinch of salt
1 tbs of soy
1 tbs of sesame or rape oil
Sauce:
2 tsb of sugar
2 tsb of oyster sauce
2 tsb of corn starch for dark sauces
2 tbs of soy
2 tbs of sesame or rape oil
2 1/2 dl of chicken broth
Preparation:
1. Mix all the ingredients for the marinade in a bowl. Cut the pork fillet into shreds and marinate for approx. 30 mins in the fridge.
2. Rinse, clean and cut the scallions into 4 cm large pieces. Peel and finely chop the garlic clove.
3. Mix the ingredients for the sauce in a bowl.
4. Boil the noodles in a large pan of slightly salted water according to the directions on the box. Leave it to drain off. Heat up half of the cooking oil in the wok. Fry the noodles until they are crisp (stir continuously). Remove and place on a serving dish.
5. Leave the pork fillet to drain off after being marinated. Heat the rest of the oil in the wok. Fry the garlic and pork fillet for 3 mins (stir continuously). Add the scallions and pour the sauce over. Leave to simmer for a few minutes.
6. Pour the pork fillet with sauce over the noodles and serve.
