Tasty pies and first-class pirogues

Gratin dish no. 0070, Dish no.0800. 

Basic dough for a pie

Ingredients:
3 dl of flour
125 g of cold butter or margarine
2 - 3 tbs of cold water

Preparation:
Grind the cooking fat pieces and add to the flour and work it into a grainy mass. Add cold water and knead quickly into a dough. Place it somewhere cool for approx. 30 mins.

Slim pie dough
1 pie dish approx. 24 cm in diameter

Ingredients:
3 dl of flour
50 g of cold butter or margarine
1 dl Kesella (Cottage cheese)

Preparation:
Mix all the ingredients together in a bowl. Knead them quickly into a dough. Place the dough, wrapped in Clingfilm, somewhere cool for approx 1 hour.

Gluten free pie dough:
1 pie dish approx. 24 cm in diameter

Ingredients:
3 dl of gluten free bread mix
1 pinch of salt
125 g of cold butter or margarine
1 - 2 tbs of cold water

Preparation:
Mix the bread mixture with salt and finely cut cooking fat until it is a grainy mass. Add cold water and quickly knead into a dough. Roll the dough out and wrap it in Clingfilm. Place it somewhere cool for approx. 30 min.


Colourful mince pie


Gratin-dish no. 0070, Dish no. 0800, Garlic Grater no. 0802.

Choose mango chutney according to how hot the pie is supposed to be.
4 - 6 portions

Ingredients:
1 batch of pie dough

Filling:
400 g of mince
1 red pepper
1 onion
1 garlic clove
1/2 dl of chili sauce
1 dl of meat broth (cube and water)
1/2 dl of mango chutney
salt, pepper

Baked eggs:
3 eggs
2 dl of crème fraiche
2 dl of grated cheese

Garnish:
Chopped peppers

Oven:
200 °C

Preparation:
1. Cover a pie form with the dough. Prick the bottom using a fork. Put a strip of aluminium foil around the edge. Place the dish somewhere cold for approx. 15 minutes.
2. Pre-bake the pie shell in the middle of the oven for approx. 10 - 12 minutes. Remove the foil.
3. Remove the seeds and dice the pepper. Peel and chop the onion.
4. Fry the mince together with the onion until the mix is evenly crumbly. Add peppers and pressed garlic. Leave it to fry for a few minutes.
5. Add the chili sauce, broth and mango chutney. Leave the mix to simmer for approx 10 - 15 minutes. Flavour using salt and pepper. Spread the mix out into the pre-baked pie shell.
6. Whisk the eggs together with the crème fraiche. Sprinkle cheese on top of the mix and pour the baked egg over.
7. Bake in the lower part of the oven for approx. 30 minutes or until the baked egg has set.
8. Fry the chopped up peppers in a bit of cooking oil for a few minutes (optional). Sprinkle on top of the baked pie.


Upside-down pie


- An exciting pie with grilled chicken.

4 - 6 portions

Ingredients:
3 deep-frozen puff pastry portions
1 grilled chicken
1 bag of deep-frozen grilled vegetables, Findus brasador broccoli and zucchini á 400 g
1 tbs of deep-frozen herbs Provencale
4 eggs
2 1/2 dl of single cream
salt, pepper

Garnish:
Approx 10 - 12 cocktail tomatoes
Basil leaves

Oven:
225 °C

Preparation:
1. Thaw the puff pastry according to the directions on the box. Connect the pieces as follows: Cut one of the long sides open along the side to be able to stick a piece in the cut and press the joint properly. Thereafter, repeat with the middle piece and stick the last piece in. Roll out the puff pastry until it covers a 1 1/2 litre rectangular dish. Oil the dish carefully using margarine and roll the dough out into the form. 2. Fry the vegetables in a little cooking fat for approx. 6 - 8 minutes.
3. Skin and debone the chicken. Cut the meat into small pieces. Mix with the vegetables and herbs. Spread it out in the dish.
4. Whisk the eggs together with cream, salt and pepper. Pour over the chicken.
5. Bake just below the middle of the oven for approx. 45 minutes until the baked egg has set. Check to see if the baked egg is ready.
6. Serve the pie on a serving dish. Cut the tomatoes into small pieces and mix them with basil leaves. Garnish the pie using the tomatoes.


Easy made crumble cake

4 - 6 portions

Ingredients:
200 g of smoked ham
400 g of broccoli bouquets
1 dl of grated cheese
1 dl of grated blue cheese
4 eggs
2 1/2 dl of single cream
1 dl of milk
1/2 tsp of salt
1 pinch of pepper
Crumble dough
2 dl of flour
50 g of butter or margarine
1 tbs of water

Oven:
200 °C

Preparation:
1. Dice the ham. Boil the broccoli in lightly salted water until it turns slightly soft. Leave it to drain off.
2. Oil a pie dish, approx. 24 cm in diameter, and spread the broccoli and ham in it. Sprinkle the different cheeses on top.
3. Whisk the eggs together with cream, milk, salt and pepper. Pour over the cheese.
4. Bake in the middle of the oven for approx. 15 minutes.
5. Grind the cooking fat into fine pieces and add to the flour and work it into a grainy mass. Add cold water and quickly knead into a crumbly dough.
6. Sprinkle the crumbly dough over the pie and bake for another 20 - 25 minutes.


Tasty pie with Västerbotten cheese

10 - 12 portions

Ingredients:

Pie dough
250 g of flour
125 g of unsalted butter at room temperature
1 yolk - at room temperature
4 tbs of water
1 1/2 pinches of salt

Filling:
600 g of grated Västerbotten cheese
150 g of onion
100 g of bacon
4 tbs of finely chopped chives
2 1/2 dl of cream
2 1/2 dl milk 3 %
4 eggs
1/2 tsp of salt
some white pepper
some grated nutmeg

Pie dish approx. 26 cm in diameter

Preparation:
Mix flour, salt and butter in a dough mixer or in a bowl. Add the egg yolk and water, a bit at a time. Knead the dough gently. Wrap the dough in Clingfilm and leave it for at least an hour.
Roll out the pie dough until it is 3 mm thick. Cover the buttered pie form with the dough and let the pie stand for a while. Pre-bake in the oven at 200 C for approx. 10 mins. Cut the bacon and onion into thin shreds. Put butter in a pan and fry the bacon until it is crisp. Fry the onion at a low temperature then mix it with the bacon. Pour the mix into the pre-baked pie shell. Grate the cheese. Whisk cream, milk, eggs, chives and salt and add the grated cheese. Season with white pepper and nutmeg. Pour the egg mixture over the bacon and onion and put the dish in the oven at 200 C for approx. 25 min or until the baked egg has set.
