"Skrabbeluker"

Ingredients:
1 egg
1/3 tsp of salt
1/3 dl sugar
100 g of grated carrots
1 dl of semi-skimmed milk
3 dl of flour
1 1/2 tsp of baking powder
20 g of margarine
Preparation:
1. Whisk eggs, salt and sugar together. Add milk and flour mixed with baking powder. Whisk together to a smooth, thick mixture.
2. Melt the margarine. Mix the grated carrots and the cooled margarine and stir thoroughly.
3. Fry the pancakes at medium heat, 1 - 2 minutes on each side or until they rise and get a nice colour.
