Quickly prepared Chinese dish with salmon

Ingredients:
600 g of salmon
1 shredded pepper
100 g of leek
2 cloves of garlic
1 tbs of cooking oil
1 tsp of curry
2 tomatoes
Half a cube of vegetable stock
1.5 dl of water
3/4 tbs of white wine vinegar
1 tbs of fresh dill
Preparation:
1. Cut the scaled and bone free salmon into bite size pieces. Slice the leek, pepper and cut the tomatoes into wedges. Press the garlic cloves
2. Fry the curry in a wok or a sauté pan and add the onion. Carefully mix salmon, red peppers, tomatoes, the stock cube, water and white wine vinegar. Leave it to boil for a couple of minutes under a lid until the salmon is thoroughly done.
3. Flavour using salt and pepper (optional). Sprinkle chopped dill on top. Serve with pasta or rice.
